Some days, the hardest part of cooking dinner is simply deciding what to cook. And if you’ve ever felt that way, you’re in good company. Have you ever seen that iconic 2008 Aretha Franklin interview where she’s asked what her biggest challenges are and she responds: “Trying to figure out what to cook for dinner nightly, you know, just night after night.” In my opinion, this is one of the most relatable things a celebrity, let alone the Queen of Soul, has ever said. Deciding what to cook can genuinely be a strain.
Luckily, for at least tonight, this Tasty content editor has a solution: Instant Pot Miso Butter Salmon and Ginger Rice.
In under 30 minutes, this one-pot meal hits all the key food groups — protein, veggie, and starch — for a satisfying, wholesome dinner. Baby bok choy and frozen edamame take next-to-no time to prep before they’re layered into the Instant Pot with white rice and a few umami boosters, like toasted sesame oil and mirin.
If baby bok choy isn’t readily available where you are, sliced cabbage, spinach, or really any dark leafy green will work just as well.
One of my favorite parts of this recipe is the miso butter: just three ingredients — white miso paste, butter, and maple syrup — melt into a salty-sweet glaze that pairs perfectly with the salmon. It’s the kind of crowd-pleasing flavor combo you’ll want to keep in your back pocket anytime seafood is on the menu.
Once your salmon is buttered up and placed in the Instant Pot with the rest of the ingredients, you’re only a few minutes away from having dinner on the table.
Don’t have an Instant Pot at home? That’s totally a-okay. A rice cooker will also get the job done in around 20 minutes! You can also make this on the stovetop in a pot, following Tasty’s white rice cooking instructions. Just remember to test your salmon for an internal temperature of 145°F before eating!
