I used to be one of those people who (embarrassingly) blanked when the server at that fancy deli asked, “What kind of bread would you like? Rye, sourdough, sprouted grain, or French?” I’d just stand there, bumbling and stammering, wondering what happened to the good old “white or whole wheat” days. Then two things happened. One, I worked briefly at a bakery and picked up some insider knowledge. (As well as stole a few recipes.) And two, I got a bread machine — and honestly, it’s too easy not to use every single time I want bread. So no, I’m not a French baker or a bread expert. But I am finding my way, one homemade loaf at a time.

How’d you do? Tell me in the comments — along with your answer to this very important question: If you could only eat one type of bread for the rest of your life (because, IDK, someone’s forcing you to choose only one and banish all the others?), what would it be? Personally, in every lifetime, I choose sourdough. I could eat it for every meal: toast for breakfast, a sandwich for lunch, and garlic bread with pasta at night. In this bizarre single-bread world, I also magically get to eat unlimited carbs with zero health consequences. It’s wild out here.
