“It’s not a difficult thing to do successfully, but this time I made some key mistakes:I added red cabbage without adding additional acid, like vinegar or lemon juice. I added too many noodles. It was edible enough on the first night, but by the next day, the noodles had absorbed all the water, and it was more of a solid sludge than a soup. By the day after the alkalinity had turned the red cabbage blue. By the last day, I was eating an electric blue mound of soup-flavoured mush.”
